Best tomato pie I’ve ever had! We got the full experience talking with the owner about the science of flour milling, dough fermentation, and the special methods to cook a tomato pie. This stuff is full artisan, and Spencer does not settle for sub par ingredients. It really shows in the pizza. The crust was cooked perfectly to support the toppings. The effort to hand mill the tomatoes really shined through in the flavor and texture. They chose a red pepper with the perfect balance of spices for the right amount of heat. Most of the time mushrooms and onions are just thrown on to check a box, but Dolorosa goes the extra mile to caramelize the onions and roast the mushrooms before they are qualified to become ingredients for this special pie. Even the olive oil goes under scrutiny to become an ingredient as Spencer explained it must have the perfect balance of fruity and peppery notes. I didn’t even know that about oils! For the most authentic and well crafted pizza, this place is over the top.

This place has super delicious pizza. We tried the hot honey pepperoni pizza with basil and ricotta and it was incredible. It was also big enough for groups of people with spacious seating in the adjacent room.

Second Dine-In Visit | Somehow the classic cheese pizza didn’t measure up as well as the first visit. The dough was a tougher chew and the sauce and cheese topping seemed a bit, different, and not as substantive.

Stopped in for lunch while visiting from the twin cities–excellent pizza. Had a slice of the hot honey and pepperoni as well a slice of bacon and leek. Both were fantastic. Great leoparding on the crust, great quality toppings, and cooked perfectly. I’ll absolutely be back when I’m in La Crosse next.
