We each got a pozole, a bean and cheese taco, and a red snapper tacos, all of which I would highly recommend and purchase again. However, what was truly mind-blowing and a revelation was their costra birria taco with bone marrow. This was the best taco I’ve ever had, hard stop. I would fly back to Denver for this taco.

One of Bon Appetit’s 50 best restaurants in the US, this is from Chef Jose Avila, one of the founders of Machete Taco, a great spot in its own right. You get the sense here that Jose is allowed to indulge his deeper tastes and flavors. Pozole is done here with a completeness and authenticity lacking from the Tex-Mex version I’ve usually experienced in the states. Tacos are also a highlight. You have the option to add a roasted split bone with marrow you can scrape into your taco. You should do this. They also have a good cocktail list and a really interesting regional spirit list of the outer edges of agave driven liquors. No reservations available. A few nights of the week you can visit the pastor taco stand out front and eat cheap tacos from paper plates on plastic chairs, which feels as much like Mexico City to me as anywhere in Denver.

Brought to you by one of the same founders of Machete, look no further if you’re trying to find an excellent deal on a Wednesday. For $5, you get 2 al pastor tacos topped with grilled pineapple AND a margarita… and the margaritas are strong. Albeit the tacos are street taco sized and small, it’s still quite a deal.

We looked forward to coming here for months, and when we finally went in, it was a disappointment.

This is an authentic, low-key spot, with a straight-forward menu of tacos and pozole, and a full bar. The rojo pozole with pollo was pretty good, with not too much going on flavor-wise apart from all the fresh components. It was simple, with subtle heat, and came in a massive bowl. I enjoyed it. The huachinango taco was excellent — big piece of fish and a delicious pineapple sauce. The pastor taco was also very good and felt like a west coast street taco. This place is worth a try and definitely has its fans.

EDIT: I found a grasshopper/cricket leg floating around in my leftover pozole. PLEASE BEWARE.

I couldn’t tell if the casual vibe is part of a planned theme, or if it’s really just that casual. Expect plastic cups, mismatched, plastic plates, mismatched chairs, etc. I liked it! But who cares about all that if the food isn’t great. Luckily, it’s quite good. We arrived at lunch time on a Sunday, so unfortunately the menu was limited to brunch (when can this trend die?). Tacos were delicious but fell apart almost immediately. And the Chilaquilas was wonderful, as were the cocktails. I’d like to come back outside of brunch and try more things!

Great little spot for tacos and margs. Best deal for Wednesdays. 2 tacos and a house marg for $5, cant be beat. It is a small place, so be prepared to wait with a bigger group, but worth it. The tacos had fresh tortillas, the meat was juicy and the salsa on top was a flavorful spicy, not spicy spicy. And the little pineapple on top was perfect! The margs were strong, don’t let the cup size fool ya. Can’t wait to come back on a Thursday and try the pozole.

I got the birria taco this time which comes with a MASSIVE bone marrow on top! This place is so good, lots of incredible taco options and probably the best happy hour in Denver. Margarita and two Al pastor tacos for FIVE BUCKS! Great mezcal selection too.
