We Started as a Food Truck in the Spring of 2017. Our signature dish and what we based out entire menu around was our Bourbon Chicken. We successfully operated the food truck in the North Metro area for 5 years before the opportunity to open a brick and mortar location in our hometown. We opened our Brick and Mortar location by the same name in Lafayette, CO in February of 2021. Since then we have had the chance to grow our menu into the amazing menu that it is now. We pride our selves on our awesome food, but more importantly, on our awesome customer service. We want to make sure everyone that comes through our doors feels welcome and part of the Ruby Ru’s Family!

Ruby ru’s street eatery is definitely one of the best places around these parts! I’ve really enjoyed the Cheeseburger sub, the bourbon chicken, teriyaki chicken and the rice and vegetables are always great. Staff is cool and quick to help you. Chill atmosphere and amazing food. The Mac and cheese is also some of the best I’ve had in Colorado. Makes me hungry just thinking about it!

This place was amazing! My mom and I stopped in because we had some time in between work and so we looked up local restaurants to eat at and we saw this pop up and gave it a try. Ecstatic to say it was so worth it! The food was seriously delicious! You must stop at this place just to experience it for yourself!! I got the Philly which was out of this world and my mom got the spicy sausage with Cajun shrimp and Mac and cheese with sliced potatoes and that was also crazy delicious! The manager was also so cool and the cook definitely delivered some of the best food we have had in a LONG TIME! We will recommend this to everyone we know and will for sure be back very frequently!! SIMPLY DELICIOUS!!!!

Definitely a no frills, street eatery. It is really good though! My husband got the Philly cheesesteak and I go the street tacos. Chicken was good and seasoned and cooked nicely. Probably best for take out. It was all good.

This place is right up the street from us so we finally decided to give it a try. There food is delicious and the customer service was on point, very friendly and attentive. We ordered the Nashville Hot Chicken Sandwich which we gave a 10/10. The chicken is crispy and juicy and goes great with the slaw and pickels. Would highly recommend. We also ordered the Philly which the employee recommended. It was tasty, I think it lacked more veggies and cheese. I’d give it a 7/10. Overall we had a great experience.

This place is awesome! Cool chill restaurant with great food – my favorite is the Banh Mi bowl. It’s like food truck comfort eats. This place is unbelievable. The bourbon chicken is the safe “gateway” meal. Wanna get crazy? Get the Banh Mi Bowl. Oh and the Mac and cheese is the best I’ve had. My kids (2/4) ate the whole thing. I live 6 hours away and anytime we get to the Denver area I make it a point to eat here if I ever get within 90 minutes.

The food here is great! I got a special they had of cajun sausage and shrimp that was seasoned perfectly. The shrimp were a little dry, but the curly fries and sausage made up for that. My partner and I found this place by accident, and I intend on going back for lunch today. Definitely give this place a shot, you won’t be disappointed
