I recently ordered the Glazed Pork Belly Ramen from Soba Ramen, hoping for a satisfying meal. Unfortunately, I have to give this place a one-star review. The Tonkotsu broth in the ramen was mediocre at best, lacking the depth of flavor I had expected. The glazed pork belly, a key component of the dish, was surprisingly flavorless, which was a major letdown. To add to my disappointment, the choice of pickled red onions as a garnish seemed out of place and didn’t enhance the overall taste.

I came in for some ramen and instead of ordering the fatty pork ramen, I tried the black garlic ramen. I normally eat medium spicy but this was a bit spicier than that. The ramen noodles were a bit undercooked for me, chewier than Al dente. The soft boiled egg was definitely hard boiled. Also the fatty part of the chasu was nice and tender but the no fatty part was very dry and tough. The chicken karage was well fried but I didn’t like the yuzu aioli.

Amazing food. The best pork belly ramen I’ve ever had. The pork broth is rich in flavor with the right amount of smokey garlicky taste infused into the broth. The noodles are amazing as well, freshly made in the store. The amount of pork belly they serve you in the ramen is the most I’ve ever been given and by far the best too.

Very generous portion of sake by the glass! Loved the karaage (Japanese fried chicken). The noodle for the ramen is wrong but the pork belly and soup were above average. Puzzled about the raw red onion in the ramen (should be scallions… ). Would come back for sake and appetizers.

Back in the days me and my homies would stay out late party all night long eating early hours of morning. That was party and mob life until our place got raided and our international connection also went down. This was back when this place was ABC Bakery for those that don’t know. Certainly not fond memories, but that’s what this seat means to me that I’m seated at tonight. Sobo Ramen Pop-up is operated from 9 p.m. to midnight on fri/sat only with shared space from their regular ramen joint. You can sit at counter or table no guarantee if it’s busy though. Workers just transition over once other is closed up. Pop-up menu isn’t as extensive, but cover most basic dishes and bowl. Ramen was decent at this time of the night more flavors than their normal seating side. Broth was f*cking delicious that I actually tip bowl and drink it. The lychee cocktail was pretty good and strong with a plump juicy lychee floating on top. I enjoy my late night ramen meal and won’t mind returning for other cocktails. Well, that’s a introduction of who I am and what I did in the past. I’ve clean up my life running numerous successful business in vegas and soon one in the bay area too.
