Optum | Brut Nature Cava | Penedes, SP | NV
Aromas of yellow apple, orange zest, peach and buttered toast are complemented by chalky mineral and floral nuances. Sappy and broad on the palate, offering pear nectar, lemon curd and honey flavors that tighten up slowly on the back half. A floral note emerges on the long, sappy finish, which shows good clarity and a repeating honey note.
$30.00
Gosset | ‘Grande Reserve’ | Champagne, FR | NV

Can Sumoi | Rose | Valencia, SP | 2020
It wraps around the mouth and is long and very persistent. Its fine acidity gives it a fresh mouth feel.
A rosé wine which is really nice to drink, with plenty of flavour and vinosity.

Stingray Bay | Sauvignon Blanc | Marlborough, NZ | 2022 $0.00
Jean-Marc Brocard | Chablis | Vieilles Vignes, FR | 2018

$45.00
Tornatore | Nerello Mascalese | Etna Rosso | Sicilia, IT | 2018
A blend of predominantly Nerello Mascalese and a small percentage of Nerello Cappuccio, this fragrant red opens with enticing scents of wild red bery, underbrush, blue flowers, Mediterranean scrub and a whiff of warm spices. The taut, polished palate boasts elegance and tension, delivering raspberry compote, strawberry, star anise and blood orange before a mineral, almost salty finish. Fine-grained tannins and bright acidity provide finesse and support.
$38.00
Cepas Elegidas ‘Con Tacto’ | Malbec | Mendoza, AR | 2019
Lovely bright ruby red in appearance tinged with garnet. Intense on the nose, aromas of red fruits (raspberries and fresh blackberries) define the bouquet and leads into a crunchy, aromatic and rounded palate. A lovely, well-balanced wine that culminates in a refreshing and full-flavored finish with notes of licorice and spices.

Quiet, unimposing dinner experience with my brother. We opted for more courses for the full experience, and it was completely worth it! Every plate was delicious, complex, textured, and was more than a few bites to really let us savour each dish. Service was excellent throughout our experience. Cannot recommend enough!

This place still weirdly seems to be somewhat of a hidden gem. Chef Matt Baker is turning out an AMAZING tasting menu with his team. The wine pairings are delicious and well suited. For the money ($165 for what ends up as 6 courses) it’s ridiculously reasonable given the quality, flavor, and sheer artistic genius. And the music? I’ve never been in a restaurant this “fancy” and sang and danced in my chair. I love love love Gravitas!

There’s a parking garage right down the street. Am interesting building and not what I would expect but it was quiet and relaxing. We were led in and my cousin and I sat together on a comfortable cushioned bench near the kitchen.

My friends and I had a fantastic time trying the Chef’s Tasting Menu! The wine expert was very knowledgeable and let us sample wines before we bought them. The chef was also very accommodating of my friend’s gluten allergy. Expensive and long (3+ hours), but that’s part of the experience! Worth trying, if you can!

The shrimp and grits, crab cakes, lamb, and the Ice Box Cake were fantastic. And the drinks were out of this world, especially “The Bash.” The atmosphere up at the Conservatory was just right and relaxing. Thank you, team, for a good time.

My wife and I celebrated our 1-year wedding anniversary here and tried the Chef’s Tasting Menu. Service was exceptional and the staff even signed a card to wish us a Happy Anniversary! The plating was aesthetically pleasing but the food was a bit underwhelming for a Michelin star restaurant. Although I wouldn’t consider my palate well-developed, I’ve tried my fair share of highly-rated restaurants including other Michelin star establishments to at least have something to compare it with. The only thing I really remember about the food was that the Braised Short Rib was really salty and I was a very disappointed because I was looking forward to it. Nevertheless it was still a memorable experience.

We celebrated our wedding anniversary at Gravitas, and the staff were full participants in making it a great experience. The food and wine were all creative and delicious, a wonderful destination dining experience. The flavors, atmosphere, and attention to detail were worth the prices on the menu.

This review is for their special demonstration lunches. I can’t say enough good things about what a nice experience it was. Everything was so well put together, thoughtful, and executed seamlessly for a large group event.

We came here for a weekday dinner. The food was delicious and beautiful in presentation in general. Yellowfin Tuna Sashimi and Pork & Peaches were good. Crispy Scale Snapper was good, but I might want to try the Green Tomato Gazpacho next time. Sweet Corn Agnolotti was okay – not particularly impressive. Chocolate Cremeux was delicious but the chocolate piece was a bit too sweet and too much. We enjoyed the bread and cocktails as well. The service was pretty good. It’s definitely on the pricier side: 5-course dinner plus two cocktails would be somewhere $250-300 after tax and tips. Overall, it’s a good fine dining experience although I’m not sure if I would come back again for this price point. (Follow me on IG ➡️ miss_dawang)

Asked a friend if he knew a good restaurant to take my wife for her birthday, he mention Gravitas but I had the impression that they were a vegetarian restaurant only, I could not have been more wrong. The place was great, we both did tasting menu and our table was close to the open kitchen which was great to see the coordination of the kitchen and servers. The sommelier ANGELO PEREZ was great as well going above and beyond to make sure we had a good experience. Highly recommend.
