Had a long business trip and as far as the food was concerned, the Coop was the highlight. Good service, knowledgeable waitstaff of the menu and various sauces. Very reasonable prices and short wait time. We had the lettuce wraps for an appetizer and I had street tacos for my entrée which were delicious. Will visit this restaurant again the next time I find myself in Gillette.

For takeout, mediocre at best. Flavor profile and texture profile are not cohesive once placed in the Styrofoam boxes and left to sit for a few minutes. I ordered the Garlic green beans, they were delicious, but the two entrées I tried, the macnarello (glorified Mac n cheese with scraps of chicken and a few broccoli florets) and the chicken chorizo tacos had little to no flavor. The cheese sauce would not stick to the macaroni and the soft corn tortillas for the tacos had fallen apart BEFORE I went to pick one up. I imagine if you dine in, it would be much better. This place is not for the travel who is on the go.

I ordered the chicken pot pie, it was cold, had to reheat and Mac n cheese could have been better, not thrilled with the food. Pie crust to thick and not much of the main ingredients.

Worth the hype, for sure. We went right when they opened on a Friday, expecting it to fill quickly, but it must have been a slower day. We wouldn’t have had to wait at all, even by 11:45am, when we left. Going to try to hit it again for lunch on our way home. The tacos and empanadas were great, but for us.. the beans and rice were also a huge #1. We took the leftovers and devoured them later that night. So good.

Great food. One of the few places I can eat where I don’t feel sick afterwards. Highly suggest chicken chorizo tacos with red sauce! Small seating area, so if you want to dine in, try a none busy time or be okay with a little wait. Most of the time I’ll do a take out order. They package them well!

This place is GREAT!! Chicken is excellent, we loved the guacamole and pico de gallo as sides, and the hand made tortillas thrilled my wife, like home made when she was a kid. Also had beer and an excellent margarita, all at reasonable prices. This place could knock El Pollo Loco off the map if they went national. and we loved Michelle, our waitress, lots of fun.

What amazing Mexican food! We absolutely loved this place. They knew how to make even the veggie sides taste great!!! Our waitress was super friendly. Gave us some awesome recommendations. Definitely a must-visit if you are in Gillette!
