Simple Means was brewed with unfiltered, raw, Hill Country well water, malted barley, smoked malted barley, and hops in early September of 2015. It was fermented with our mixed culture of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in stainless steel for about two months. It was then 100% naturally conditioned through refermentation in the bottle for another two months prior to release. Spanning over five decades, the Colombian Civil War has raged on with a bloody history of violent clashes, assassinations, guerrilla warfare and human rights violations. The Liberal and Conservative political parties with their internecine feuds have constantly had civilians caught in the crossfire. La Violencia was a particularly violent era spanning from the late 1940’s to 1950’s, with over 200,000 dead and echoes of 3,000 killed a year. A majority of the population has not known an era of peace their entire lives. Fighting for territory in the countryside, Peasant militias, paramilitary and military used guerrilla and psychological warfare as a grotesque tool, The Colombian Necktie being one of them. Sometimes even done post mortem, it was less for the victim than it was to send a haunting message to the surviving witnesses of the carnage. Slicing a deep cut across the neck, the tongue was then pulled through the gash allowing it to dangle down the chest. When done to the living, the victim would die from bloodloss, asphyxiation or drowning in their own blood. A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks. 3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. 3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. Our PGR has aged for 24 months on oak barrels and has been bottled for the first time on the 27th of December 2007. The main difference with the Pannepot Reserva is that PGR matured the last ten months on Calvados oak barrels, adding extra complexity to the beer. We dedicate this beer as a tribute to Jeppe & Michael of Ølbutikken in Denmark. Those gentlemen were the first to discover our beers on an International basis back in 2004 and are responsable somehow for our beers being all over the globe since then. First thing first….I’ve had lots of wings in my 52 years and these were by far, hands down, the best wings I’ve ever had. Perfectly crispy, well seasoned and the sauces were great. Pizza was very good and the beer selection was great for a small town. 5 stars for the place….6 stars for the wings.

This was our first time visiting here. The bar and seating has a speakeasy feel to it which is so cool! Unlike anywhere else I’ve been in northeast Iowa. We were seated promptly which is not the norm for this place. The waitress took our drink order then brought our drinks and took our food order. We waited almost 40 minutes for our food which I didn’t think was horrible in a packed restaurant that usually has an hour wait for a table. No one came to refill our drinks so my husband went up to the bar to get refills. The drinks were fantastic by the way! There were 4 of us and 3 of us ordered wings, my husband ordered a pizza with Italian sausage. He said he loved it. I tried a little bite and I didn’t care for it but that’s okay we don’t all like the same things. The wings were good except they switched up our orders, I ordered mild and our friends ordered medium. Somehow I wound up with medium and they got the mild. It worked out because we didn’t figure it out until we shared across the table. The wings were very good with just the right amount of sauce on them. Our friends ordered fries and deep fried cheese curds. They were huge portions and none of us could finish all of it. Our bill was very reasonable, $90 and we all had either 2 mixed drinks or 2 craft beers and quite generous portions. Over all there were a few imperfections but I have found that being patient with wait staff and with food waits gets us much farther. I think if we had complained they would’ve apologized and tried to make it up to us. I really can’t complain though. If I did the only thing was the women’s toilet wasn’t flushing but there was no line at the men’s room so we all took turns. We had a great experience over all.

Chicken wings were big, meaty, and tasty. The habenero sauce gave them just enough bite to raise a slight sweat on my scalp. The pizza is always good, and if you don’t see the combo you like, ask nicely and changes might be accommodated. King Sue IPA from Toppling Goliath was on tap–not cheap, but tasty.

Everything was great. Came for bloodys and was surprised to find a great selection of craft beers. Who would have thought a small town would have a place like this. The pizza menu was amazing and tasted great. We got 4 different unique 9 inch pizzas. The bartender (owner) and cook (his mom) were great to talk to. Music was good and fit the mood of the place. Will be back if in the area.
